This week, "Bringing It Home" TV show host Laura McIntosh tells us how to make Arroz con Pollo (Rice with Chicken):

Ingredients
Rice 2 Cups Raw. Stream and set aside warm
Carrots fine dice Approx. 2 ounces
Celery fine dice Approx. 2 ounces
Onion fine dice Approx. 3 ounces
Sweet Pepper Approx. 2 ounces
Green Beans Approx. 2 ounces
Sweet Corn Approx. 2 ounces
Garlic Fine Chop 1 Tablespoon
Cooking Oil Achiote (paste) 4 Tablespoons
Cilantro 1 Cup
Salt & Pepper

Cooking Instructions
1. Blanch and refresh the green beans and peas. Reserve.
2. Saute the carrots, celery, onion and sweet peppers until slightly soft. And the garlic and annatto paste continue to saute for one minute or until the annatto paste melts.
3. Add the steamed rice, chicken meat, green beans, peas and sweet corn.

Old favorites, up and coming bands featured at Friday night concerts

SACRAMENTO, CA -- Friday Night Concerts in the Park, Sacramento's popular summer concert series, announced its 2011 lineup featuring such old favorites as Mumbo Gumbo and Mick Martin & the Blues Rockers and introducing new acts such as Walking Spanish.

The concert series is celebrating its 20th anniversary and over the years more than 400 acts have taken center stage at Cesar Chavez Plaza, including Cake, the Deftones, and Jackie Green.

The free family concerts kick off on Friday, May 6 and wrap up on Friday, August 12.  Fifty local bands will be performing with music that covers practically every genre, said Lisa Martinez, marketing director for the Downtown Sacramento Partnership.
